Tomato Basil Sandwiches

Tomatoes? Basil? and Cream Cheese?! You throw in a foot massage and this sandwich is seriously heaven on earth (Eww. Food and feet? Sorry for that mental image!)

I bought almost all of the ingredients at the farmer’s market this weekend with the sole purpose of making this sandwich. I love knowing that the tomatoes were actually grown just a few houses down from ours. I sometimes dream of turning the 2/3 of an acre we’re not using into a CSA garden. But then again, I also dream of Brad Pitt. I, unfortunately, have neither the time nor energy to devote more then a dream to either one at this time in my life. Maybe in the future. Mmm, Brad Pitt.

    Yeah, gardening takes some serious energy. I knew that going into it, but still, the amount of time I put into it is more than I imagined. I enjoy it–well, except for when all my work with my tomatoes was for naught!–but still, it’s a lot of work. These days I am not putting nearly as much effort into it. It’s just too hot, and the plants are huge, so they can withstand some bugs (stupid cucumber beetles making a comeback) and weeds. I gave up on the paths between plots altogether. But it is exciting to get something out of there every time now–today, a zucchini, a pepper, swiss chard, herbs, and the first cucumber. Carrots soon, and the onions are ready–I’m just giving them time to form a dry skin before harvesting, so they’ll last. No way I can use 45 onions quickly. Maybe start small–a 10×10 plot–then move onto the 2/3 acre!
